From the bag, patted dry with paper towels, seasoned with Lawry's garlic salt, ground black pepper, a little curry and just a hint of cumin. Rub it with extra virgin olive oil, sear both sides in pre-heated grill (around 400 degrees), turn 1/2 the burners off (until now, all were on all the way high) and leave the rack over the part where the burners are off. Gotta be right on top of it, it can catch fire while searing because all that fat is melting and hitting the flames.
