Worm castings are not so easy to put an NPK value on as it depends what they have been feed. The 1-0-0 in your list applies only to commercial casting produced by worms consuming only cow manure. Castings created from a richer diet are therefore richer in nutrients. It pays to look into what the EWC you buy is based on, if the info is available. EWC from your own worm bins is going to be much richer in all nutrients if feed a variety of food wastes.
 
@Rev. Green Genes You just jogged alot of my memory of all the times I would take courses at the AG. Center.. also, its mind blowing how much my grandfather utilized alot of these materials, and knew how to put them to good use in garden, everyone was always amazed at his gardening skills.
