Tying down the main stem also produces a flood of auxins, which are hormones that regulate plant growth which cause elongation of cells in the shoots. In laymen terms, that means all of your side branching gets a MASSIVE boost in growth while the main stem stays down. This makes for bushier plants (and potentially more cola buds if that's your thing,) and tends to help keep the overall height down.
