Anyone have a link of a nice walk through on how take down a plant from start to finish, its for a first timer gonna start chopping any day now.

Thats almost a personal preference. The basics are trim fan leaves and as much stem as possible. The great big stereotypical marijuana leaves. After those smaller leaves with little to no trichromes. Then smaller leaves that are covered with trichromes if you want or leave them on. Some people trim while in a pot, some cut off a branch at a time. Some cut the whole plant down. Basically start from the biggest leaves. How you will dry decides how much you chop buds and stems. If,you hang branches they just cut the plant into manageable pieces. If,you dry on screens then cutting buds off the branches.

Paper bag method will work fine. Me personally I trim by myself due to me not wanting anybody to know. I take one branch at a time all the way down until you get the light fluffy buds that didnt get much light. I leave all the small stuff about another week after chopping all the branches off cause it now can get light. When taking one branch at a time i trim everything but the sugar leaves which are the small ones with trichs. Keeping them on during drying will help protect the trichs. I just take my time one branch at a time, but I remove the big stems and break it all down into golfball size nugs that go straight into paper bags.
