Germination Rates Based On Storage/Timelines After Harvest

The Yearlings have sprouted 100% so after 1 year of storage in a Airtight Box no Problems.

So i have my seeds in 3 small mason jars with desicant packs inside and a hygrometer in the bottom of the jar to keep an eye on humidity in the fridge with temps 36-50f

My main concern is humidity being too high.
At the highest is 40%
What should i keep the humidity at?
I might need to remove the jars and add more desiccant?

And when i remove the jar from the fridge what procedure should i take to let the seeds acclimate to room temperature before germinating or if i decide to add more desicant to lower humidity?

Im kinda paranoid about storing my seed collection for long term and dont want to freeze them.
So any tips or reassurance would be great.

I might keep one jar at room temp just so all my eggs are not in one basket. Room temp for me is 75-80f though so i dont really want to do that.
Thoughts and opinions?

I keep my beans in their packaging in a wooden box in the cupboard.
I've never had a problem with beans not sprouting - even ones that are a few years old!

Store in a cool dry place should keep them from going south! :D

I keep my Beans in Eppendorf Tubes and then off to one of theese Boxes Tabacco is sold in. Off to a cold Place in the Basement in a Cupboard and all good. Just germed 5 Jackhammer x Blue Hammer Beans which were stored like this for 5+ yrs... got 5 out of 5 up.....
