Blending the RO/tap is fine, some dolo' would be OK but not necessary? Most soils have lime in them already anyway, plus the nutes too... Ca-Mg products are more immediately available, true,...
Dolomite is chemically different from typical garden limes; it's generally slower acting, though grind size makes a big difference (powdered is faster acting, course much slower)...
For a soil pH probe, look into the Accurate 8 (CWP) or the identical unit under a different name in EU. Mine has served well for years,.. those skinny probes are lousy for accuracy!
