Mostly I pan fry them. I've mashed them in the past, as well as baked them. Pan frying is my favorite. My favorite way is to peel them, cut them into about 1 inch pieces, salt them, shallow fry them over medium low heat until just starting to brown. At this point I take them out of the oil, let them cool and drain. Once cool enough to handle, I use a fork and just mash it a little bit to expose more surface area, and finish fry. Kind of the same idea of double fried potatoes.
The other way like them is just to cut the plantains into 1/4" thick planks, and pan fry them. Salt them generously and I usually make a garlic sour cream dip. The greener the plantain the less sweet (more bitter) they are. I'm not into overly sweet food, so green is the way I like them, although it does make them way harder to peel!
