@chefdave I hope he dispeles this concept about cooking meat rare . And I mean all meat . If you ever been inside an abattoir you'll never eat meat again . Do you know why they hang beef ?? It's so it can decompose for 14 days ( in Canada ) and it will be nice and tender . Now we take this decomposed piece of flesh , drop it on the BBQ for 10 seconds a side so its nice and " blue " so that the blood is still running out of it and this is what we call enjoyment !!

If it ain't well done I ain't eating it . Why would anybody in their right mind even think about cooking lamb rare you might as well eat it on the hoof why kill it ?? just jump a fence and eat it in the field .. Rant over .
