Nitrogen excess at the end for sure is something to avoid.
Paper bag drying works well especially is ambient RH is low, be careful doing it this way if RH is high. I like circulation across my bags to decrease any chance of mold. Heat while drying is a key factor in destroying smell. Try to find a drying spot in the 50%rh with 70F temps. Try not to dry in 80's or higher or smell will be lost.
Some strains/plants simply lose their smell and are not super strong. Often much smell comes out in the jar cure, but it can take 20-30 days(even longer) to pull the full scent.
