I have two plants currently flowering and I'd like to LST them to allow for more light, would it be okay in the state there in?
Here's the two plants i want to try this on

LST during flower is just fine, however what you want to do is avoid lowering main tips lower than less productive areas of the plant. The growth auxins is what important here. If you lower main bud sites too much then the higher smaller buds(whatever is highest in profile) will take over and try to be the main growth site.(therefore taking the energy from the main sites)

I thought we were dealing with photo plants here, but I just realized they are autos....lots of mixed opinion on defoliating autos. I did some select defolition on an outdoor auto blue mammoth and it worked well this summer.

Bromeo is bang on with the comment regarding late life lst. Some plants harden up too much and it will put too much pressure when you go to tie it over.
