stick it in and give it a minute or two to stabilize and read.

Does it go up after a minute? Or does it stay there, also when soil is dry what does it say? Could be that you did get a faulty meter. Or your ph is actually that low. But they do come with a one year warranty that will cover it, from control wizard I believe or you can message the seller to see if they can take it back under warranty

But accurate 8 are good. I use it and have a buddy with a blue lab and mines usually always on point or .2 off at most.

When i put it in the bag of soil less soil I got from the hydro guy it does this

Well your meter works, it looks like, your soil that you tested it on first though, is really low.
