I realize much goes into this broad question. But I'm curious on what you guys think.

5x5 tent
1000w MH/HPS
9x 5 gallon pots

To get 2.5 pounds I would need roughly 4 ounces per plant which doesnt seem very hard to pull.

How difficult does 2.5 pounds every harvest sound with this setup?

if you have the Genetics and the skills then yes 2.5 pound is achievable with that set up... but you better be top of your game and know your shit inside out to hit those numbers

How long of veg time would you think I need?

Strain depending but probably anywhere from two month veg to three month veg at least maybe more to achieve that goal

Ain't happening unless you are either extremely lucky or have the accrued experience necessary.
I always prefer two lights of lesser wattage than just one big wattage light. I much prefer light spread for your size tent.

I'm not sure how you can say ain't happening. 1 gram per wat is definetely possible and under 1000w lights that would yield 2.2 pounds.
