Do NOT want to rush the process if it is said to be better not to!

I've always been told the dehum with dry every thing too fast and unevenly. The buds get crispy the stems are still wet, it effects the flavor as well. Captures the Chloryphl and tastes green/harsh. If you are drying a whole room top to bottom of plants you need one just to keep up with the moisture and I believe the general protocol is a few hours on, few hours off.

Depending on the rh in your drying area (closet, room, box) a desiccant type dehumidifier can be beneficial ... a good Hygrometer is more important ... if the rh in your grow space is 60% or less there really is no need for a dehumidifier ... unless as Torch said, you're working w/ a room full of weed ... Desiccant can also be useful for fast drying a bud or for drying small quantities in a box w/o circulation ... care should be taken not to dry too much or too fast ...

If this one isnt an eletrical one, then it should be fine. Mine come like that with a plastic casing and some stuff in a bag that sits in the casing over a tray/ basin absorbs the moisture and drops it in the basin. There is nothing pulling the mositure into this so technically its only taking in the mositure thats around it. I used my ones with my last grow and they dont seem to speed up drying process but are good to suck in all the extra moisture and help keep mould at bay.
