I have 20 NL autos in a 5x5 tent with a 1000w LED, around 535 actual watts (posted multiple threads on here the site has been very helpful). Some of the plants (at around 6 and a half weeks from planting) are getting much more dense young buds, are darker in appearance and have a healthy layer of trichomes and sugar leaves. Other are much taller and the buds are barley starting and they are lighter in colour and have no trichomes.

All the plants have been lollipopped, I am currently feeding them an all in one nutrient from aptus, along with a calmag supliment and it seems to of sorted out the deficiencies I was getting earlier on. One thing I don't understand is the smaller plants are the ones most mature with denser buds and trichomes and the ones that shot up are barley developed, which seems counter intuative.
The smaller ones have flowers that seem more bud like too, where as the taller ones buds still look like white hairs as opposed to buds.

Will they likely even out or will they likely need to be harvested at different times?

Is it the genetics that cause different rates of development?

Yep. Think of it like this - if you had 5 children, even though they all came from the same mother and father, they all wind up with different looks, heights, weight, etc.
