Coffee grounds will for a fact drive the pH towards the acid.
One of the better amendments for blueberries that thrive with a pH of 4 to 5. We have used em' with great success for our blueberries for years.
That said, my wife brings grounds home from work. Lots of grounds.
So a couple weeks back we were making up potting soil for a corn experiment of hers and I thought she was being heavy-handed with the coffee. Sure as I'm breathin' when I checked that batch yesterday I got readings of 5.2 to 5.8. At and below the lower preferred limit for corn. I worked in some gypsum, will check it tomorrow and see whuts whut.
Based strictly on my personal experience I don't use coffee grounds as a stand-alone amendment for anything other than acid loving plants. Added to compost though and angels cry with joy (-;
