At 45 days old should I be pulling just some fat bottom leaves or is it ok to pull any along the stems that are blocking light on lower buds?

Your pants look very healthy, you should be able to pull off whatever leaves you think are blocking bud sites.
 
Your plants look very nice.

At this point, I'm usually starting to clean up the lower third of the canopy of leaves to get better airflow around the base of the plant. And I'm stripping off any tiny buds that I don't think are going to amount to much. Trying to push as much energy into the main tops as possible.

That's just me though. Someone else may come along and spout the usual "god's solar panels! you should never defoliate!" routine/quote.

It's important to study the plant structure, observe and experiment to see what works best for you to achieve the results you desire. Have some fun with it. That's how you learn the most.
 
Yes sir thats the plan. I’ve already stripped the bottom a bit of both leaves and tiny buds that’ll never see the light. Sometimes though I have to check myself because all I wanna do during the day is fuck with em somehow hahaa.

I don't do a ton of early LST these days. I top and then widen the canopy as she grows taller. So...I strip buds as she goes through the final stretch and I widen the canopy further and further. Sometimes what I think is a shitty bud because it'll get no light, ends up being a good bud after the widening of the canopy and the stretching. So it can be a bit of a delicate dance. I just do a little at a time here and there and wait to see what the plant is doing. Once I switch to B nutes after I see the little cotton balls formed, I get a little more aggressive. I try to concentrate everything into larger buds up top, because honestly, I hate larf and I hate to trim.

YMMV and all of that stuff. I get the solar panel argument up to a point. I mean, solar panels are great. But do you install them in your basement? Because that is how I view all of that lower growth that gets shadowed out it's just basement stuff. Photo below from my last run, and of the results that I personally like to achieve. 3 of the 4 there were just ready to harvest. Anyway, I'm glad that you got your nutrient issues worked out. Looks like everything rebounded nicely.

Healthy plants with developed root systems can definitely take it. I completely leaf strip (schwazzing) my plants 2-3 times during flowering to be able to grow SOG without ending up with a bunch of larf. I wouldn’t be able to get away with growing 2 pounds in 8 square feet without all the leaf plucking.
