Sounds delicious MOG, I don’t have a fancy set up. I just have an old Weber gas grill with a smoke box. In the box is 2/3 applewood 1/3 hickory and I smoke chickens that way. ( after a nice rub) . Too afraid to relatives would balk at non traditional methods.
As it is, I’ll be sure to have a nice edible about an hour before everyone arrives!
I’m glad you have a stickler for an inspector. Make them get it right... electrical and all.

I caught the code violations before the city came to inspect. They had to totally redo what they had done starting with raising the battery to be min 12" off the ground (it was 5"). Then the wiring was mostly wrong. here they are working on it. They did get it done and it looks correct to me?
