KISS Chips...By Mossy...

Microwave two jacket potatoes....DO NOT prick the skin...that will steam the potato in it's own skin...and loosen the skin...

Slip the skin off..no knife peeling.....

Chop into chip shape.....

and shallow fry.....turning just the once..coz the potato is soft...don't keep poking them...

Drain on kitchen paper..salt and serve....

Jacket potatoes can keep in the fridge for 4 days..so you can Prep ahead.......shallow frying takes 10 minutes..faster than you can order a take away....
