I've never heard of it before. But it's either a cannabinoid or it can be converted from THC? It is an art to get bacon just right, and like you I would prefer undercooked to overcooked. Costco has the best price on bacon but it is marginal as it is not well smoked. I add liquid smoke to the package and wait a day. It is pretty good that way. 3# $15. but liquid smoke is expensive.

Exactly, it is an art to get it just right. There is a point when the fat just turns a golden color and the meat still has some chew, for me this is the just right cooked level but it is easy to slide right past that to crispy.
