My mom was from Mississippi and she would slap you to sleep if you boiled the black tea. It is extracted at 202°F for 4 minutes. Set the timer and the simple syrup was made with pure cane sugar - only. The thing that was optional was the sweetness you liked. It was made a little sweet before refrigeration and then you could add more syrup if you liked.
