Sounds really good. Yea, if we were in the lower 48 we'd be able to find some good stuff but this supermarket stuff here isOh you'd love my smoked pork loin. Moist and so tender you cut it with your fork.
I cut full loins in half and usually do two at the minimum.
I fill the smoking chamber. I can do 2 full loins, two racks of ribs and usually two or three butts or shoulders.
I sometimes put another couple ribs on to finish with the butts, after the first set finishes and after the stall from the butts..
No one doing pigs around here
