It's been almost 2 weeks since they sprouted.

I've been watering them twice a day with 18/6 light for almost two weeks now. I am a beginner at this, so any advice on how to move forward would be much appreciated.

Your plants look dry I would start watering from top but around outside of plant do that the roots will run to the water and there for growing and helping the plant and if it gets to dry you can get dry spots under the dirt and it will just mess up the nutrients uptake that the plant would take too none
 
I get that discoloration in Fox Farm soil too. It goes away as it grows out.

The short height is normal if you have a strong light source, the plants don't need to stretch to reach the light.

What temp and humidity are you at?

The temp sticks between 80–86 degrees. Humidity sticks between 39-44. I'm using a Mars Hydro light.

Leave a small ring of dryness around the plants so the roots stretch? Ok. And try not to let the top soil dry up too much in between waterings?
 
Roots will only grow when they stretch for nutrition. Always water at least the leaf distance away from the stem. Remember over watering is the biggest reason for failures.
Dunno why someone doesn't mention some type of moisture meter when they're cheap and an easy way to KNOW what's happening at the root ball...the most important part! After 20+ years, I still use one to double check ....ya gotta know some of these simple things....
