how many plants would I be able to put in a:
44 cm / 17.3 inch = length
76 cm / 29.9 inch = width
grow room?

Thing is right now I have a plant in there and it's taking all of the space because I LST'd her.

I want to know what's going to give me the highest yield?
Just the 1 plant like I'm doing now or more in more pots?

right now she's in a 3 gal pot
would doing a SOG with 3 plants give me more yield?

and if I wouldn't SOG:
Would it be a good idea to (in this kind of space) plant a new plant every month? or would it overgrow the others?

here's a some pics how it looks right now:

Have you considered a scrog? Single plant in 3gal or a few in smaller, it'd obviously take longer to fill a screen with one but a few would be a quicker turnover.

You would get the benefits of a larger canopy/yield while also eliminating crowding and popcorn down below.
