How do I know if my buds are super sticky or still wet?

Have you tried grinding some up in a grinder? I have found that to be a good way of giving it a field test so to speak. If your grinder mushes it all up like a mash kinda it’s still got water in it. I don’t think you could have much left though at this point

I have some bud that has been in jars and over dried been 48% for a couple months and they still stick to each other and other things. Feels wet buts not. I have multiple jars with meters and all the same 48-49% and sticky. Some strains just get sticky, gorilla glue is one of them.
 
Just checked hygrometer now and it's reading 66% RH so I opened bag and rotated everything and will close it back up after 15 minutes or so and continue to monitor.
Yup just keep checking. They will remain sticky most likely so watch the meters. Super greasy bud is hard unless u have the meters. Checking by touch when they’re just dripping with oils is impossible.
 
To me it sounds like you’re spot on and just have the sticky bud. Not a bad problem to have.
I didn’t see it mentioned here, but when was the last time you calibrated your hygrometer? If you cannot calibrate it, you can still get a reading and see if it reads high or low. They usually are not off by much in my experiences, but if your meter is one that reads low, this could allow higher moisture content in your buds.

That’s why having a bunch is good if it doesn’t seem right put a different one in.
 
It's been a few months since i calibrated. I could always do the salt and water in bottle cap inside zip lock bag calibration though.
