That sounds like a good plan, I have no experience with easy ryder other than what I've seen online. Sounds reasonable to assume, you would get a larger coloured plant from the cross. But it will be a matter of your selection and how many you can grow out to find what you're looking for.
I got 70% coloured females in these F2's, only 5 in 35 were green.
The males are easy to spot colour in too.
Lot's of flavour in these, I haven't sampled any, but when I grew out a small batch of F1's the potency was good.
