Thought it was getting close to being ripe but she started foxtailing on me. What do you guys think? Time to chop?

You mean reflowering. Foxtailing tends to be long, airy, and bleached. Those plants don't look stressed, are they still drinking pretty regularly? The landraces I've grown tend to reflower several times if you let them go a few extra weeks but once they begin to fade/water consumption lowers - right about harvest time for me
 
The top buds used to be round like golf balls. Kind of elongated over the last week or 10 days. Started throwing out new pistols everywhere after there was about a week to 10 days of no new pistols. Seems to coincide with it hitting super high 90s to low 100s here in the Ok. Had some do this last summer and wasnt very good so just getting nervous. Dont want to wait to long to harvest if she's ready.
 
Have you checked the trichomes? That is some high heat. Humidity usually kind of decent ish in OK but definitely would be concerned
 
Some buds I'm seeing a few amber mostly cloudy a few clear. Plant is @75 days and been outside whole time if that matters

I check the top and several parts of the middle, be sure you aren't looking at sugar leaves as those trichomes become amber faster than the calyxes.
