Pine tip honey:
Ingredients
  • pine tips - 50
  • water - 1 gal (4 liters)
  • sugar - 4.5 lb (2 kg)
  • citric acid - 2 tsp (10 g)

Preparation
Soak the washed pine tips in the water. Boil until half the water remains.

Strain and put in 2 lb (1 kg) of sugar for each 4 1/5 cups (1 liter) of fluid, and boil until thick.

Add the citric acid, for each 2 lb (1 kg) sugar – use 1 tsp (5 g). Pour it into jars, close well and keep them in a cool area.
 
Spruce or Fir Tip Syrup
Ingredients

  • 2 cups water
  • 2 cups sugar
  • 2 cups fir or spruce tips
  • 1-2 tablespoons lemon juice (optional)
Instructions
1. Bring the sugar and water to a boil in a lidded pot, stirring to make sure all the sugar is absorbed.
2. When it hits a boil, turn off the heat. Stir in the spruce tips and lemon juice, if using, cover the pot and leave to cool.
3. The longer you steep the syrup, the stronger spruce flavor you’ll get. I let it steep overnight.
4. Strain the syrup through cheesecloth and bottle.

tea made from spring swollen spruce tips is good, even put them in the home brew, I imagine the syrup is good too
