I get all my ham here: SOOOOOOOOOOOO Good. It's not that spanish miniature black breed that's all expensive. But it is world class. They also custom cure if you like, and ship worldwide. They are well known by chef's for sure.
That is correct, and my brother was trying to import some breeding stock a few years back. That, like several other business ideas didn't get off the ground. There is one other breed with a close genetic profile that is available to purchase. The iberico's are not let out of the farmers sight.

Its basically a bucket list thing, i always dreamed of having a Iberico at home like this.
Probably not going to get another for many years...
I eat by itself in small thin slices, or with some cheese, make some tapas, and accompany with a nice glass of red, or a cold beer depending on the time of day.....
