Chopping tomorrow and the area where I will dry is 72* and 62% RH.

I dry in conditions similar to that, slightly colder. It's in an extra tent I have. If you can keep it in a dark place that will be better as well. Just need a light fan breeze pointed at the floor or a wall, just not on the plant directly.

I wet trim the fan leaves off and hang the entire plant upside down to dry. I then do a dry trimming after it's at the right moisture.

If you are worried about over drying you can hang dry it like that till the sugar leaves feel crispy on the buds and then cut it down into small branches and place them into brown paper bags to finish out the dry. That's what I do and it helped me get much more consistent.
 
Those are good drying conditions. You could try splitting up your harvest to better your chances of success. I wet trim including the sugar leaves and toss the buds in brown paper bags. Leave the bags closed but shake them around a couple times a day. I haven't had a problem. Just make sure to inspect your buds before drying. If there are any signs of possible mold, cut it out and toss it. You can save the rest of the unaffected bud.
 
If you can’t hit 60 and 60 I would take measures to match your RH closer to temp because that’s prob easier. For example where I grow the ambient room temp is wicked f’in hot right now. I dry in a climate controlled 2x2, I had to move it into my bedroom with the good AC to dry three plants. My AC could only get the tent down to 75F so I ran my RH @ 75 initially for the first 5ish days, then dropped to 68. I cure in grove bags so this style of drying had me good to cure in 12 days. Keep In mind I have airflow via pole fan pointed at the floor and the top of the tent exhausts via fan to window vent.
