Slow curing reduces the hay smell. You want to give the chlorophyll time to gas of before you lock it in. 7 days before going to jar would produce a good dry, 5 maybe. If your area is above below 50% humidity then you should really use brown bags to slow it down. If hanging dry less than 50% humidity with a fan blowing at it you’ll dry to fast.
Try for 50% humidity, 75 degrees in bags with good air movement in the room. 6/7 days then jar and burp till perfect. 5% past mark can be rehydrated in jars with fruit peels but give jars a few days to even out before drastic measures. To moist in jars and get them back out into bags. Towards the end 5% can happen fast so if your st 68% in jars maybe just back out for 12 hrs.
