Why fridge-drying is a HORRIBLE idea

I heard myself whisper to myself.

Moron. Hey. Wake up.

I opened my eyes. Yeah?

You have spent your life in barn type structures. You know how condensation works. You know that when you open that fridge door, comon Azton, you know this. What happens to the moisture in the warm room when there's a sweet ice cold metal plate to stick to? Uh? Yeah you idiot, you pull all the moisture from the room into the fridge.

I've used a converted wine cooler for my last 4 dries and had no issues. As long as you monitor it daily and keep RH at 61% and temps at 61 degrees, what is the difference between this and drying in an enclosed room, kept at similar temps and RH values? Small fan for air circulation that doesn't blow onto the stems or flowers when hanging, helps keep anything from forming on the buds, just enough to keep air circulating.
