Open Pollination vs Selected Cultivars

I notice a lot of people do open pollinations, especially in preservation projects. I get the idea of keeping the variety in a line, and not messing up in your selection. I have always been under the impression that selection is how you make something better. I've used multiple males at different stages of a project before, but I always selected them, and bred using clones etc. so I know what's what.

However my main question for those that do open pollination, as well as selecting specific mothers and fathers for projects. What generally gives you the best offspring? Most potent, best pest resistance etc. Also when I say open pollination, I'm not talking about selecting a male, and breeding him to different phenos. I wouldn't consider using one male, to be open pollination.
