Harvest & Curing Harvesting Seeds Question

Would love some help I am going to be harvesting in the next week or two and wanted to make sure things I do are right. How long do I let the seed dry before putting in to ziplock? Will the seeds be okay in a ziplock then ziplock into a paper lunch bag so no light and then in the fridge? Is that right will that work? ty

TY So much I had heard from a week to 4 months for seeds to dry. I was thinking 4 months seemed long. Should i put a grain or 2 of rice in the ziplock or will that dry them to much. my RH is 20- 30 %
