If so, what is the preferred method of how to go about the take down. I think I heard something about chopping at night or in the dark. I have a dark room/ dry room set up and plan to cure in Grove Bags.

as for take down i jus cut off each branch and hang upside down to dry
no special time jus whenever i can be bothered
do 8 at time n takes 3 - 4 hours to cut n hang!

once dry sort buds into jars for 2 weeks curing

never chop in dark as like to c wat im chopping!
 
You are not done imo. Trichomes on sugar leaves mature faster than any other part of the plant. I'm thinking around 7-14 days, how often are you watering at this point? If watering has slowed (once a week) or they are no longer drinking then I'll go ahead and chop them.

I tend to wait for the leaves to start fading and the plant to lose vigor before I decide to harvest. I don't entirely judge based off trichomes because the tops tend to be a bit more mature themselves so I check around the middle as well, on the buds, for readiness as well

How is the humidity in your home? Is it stable? That determines for me if I'm going to do a whole plant or if I'm going to cut in sections. During the winter I can barely keep my RH at 55% so I cut the whole plant down and hang it in a dark closet that stays around 65f. During the summer the RH is right around 60-65% so I cut the plants in sections to allow them to dry faster than with the whole plant.
