Frank's Fudge Brownies
Ingredients:5 oz. Bittersweet Chocolate, chopped
2 oz. Unsweetened Chocolate, chopped
8 Tablespoons Canna Butter (or use half canna, half regular butter for less potency)
3 Tablespoons Unsweetened Cocoa Powder
1 1/4 Cups Sugar
3 Large Eggs
2 Teaspoons Vanilla Extract
1 Cup All Purpose Flower
Directions:
Heat oven to 350 Degrees F. Cover an 8 inch square pan with enough tin foil to overhang the edges by a few inches, and work the foil down into the corners of the pan, and spray with unflavored cooking spray.
In a small bowl, microwave bittersweet chocolate, and unsweetened chocolate on 50% power for 2 minutes. Stir, and continue to microwave for 45 seconds at a time, on 50% until chocolate is melted and smooth. Stir in coco powder and melted butter (I don't like to microwave canna butter. I instead opt to melt it in a double boiler)until smooth. Let cool for 2 minutes.
In large bowl, whisk together sugar, eggs, vanilla extract and salt until well combined.
Whisk in melted chocolate mixture.
Stir in flour, starting with half of it, stir until combined, add the other half, and stir until no streaks remain.
Scrape batter into pan and smooth out the top.
Bake brownies for 40 minutes, rotating pan half way through. Let brownies cool in the pan for 20 minutes. Using the sides of the tin foil, lift brownies out of the pan, and transfer to a cutting board, and let cool the rest of the way before cutting. If you don't let them cool all of the way, they will crack, and fall apart while cutting.
